SABLEFISH

Sablefish (also known as Blackcod) are found in the deep icy waters of the North Pacific Ocean. They can live up to 1,500 meters (5,000 ft) below sea level. The Sablefish has a buttery texture and flavor. The delicate-white flesh is moist and extremely rich in healthy omega-3s. The average size ranges from 2.3kg to 4kg (5lbs to 9lbs).

SOCKEYE SALMON

Sockeye Salmon is highly-prized for its red-orange colour, distinctive flavour and wonderful firm texture. Sockeye is rich in beneficial omega-3 fatty acids. The average size is from 1.8kg to 3.6kg (4lbs to 8lbs). Sockeye is ranked in Japan as the finest salmon for sashimi and sushi.

COHO SALMON

Coho Salmon (also known as Silver Salmon) has distinctive silver scales. Its flesh is pale pink to mid-orange in colour. Its flavour is milder than Sockeye salmon. Rich in omega-3 fatty acids. The average Coho ranges from 2.7kg to 4.1kg (6lbs to 9lbs)..

ALBACORE TUNA

Albacore Tuna is highly-prized for sushi, sashimi and tataki (pan-seared sashimi-grade tuna.) It has a delicate flavor and pink flesh that becomes firm and creamy-white when heated. High in anti-oxidants (selenium and omega-3s.) High in protein. Low in fat. Albacore Tuna is called the better tuna because they are harvested at a younger age and smaller size, at 2 to 3 years, and weigh 3kg to 11kg (6.5lbs to 24lbs.)

PACIFIC SPOT PRAWNS

Pacific Spot Prawns are a delicacy known for their sweet, succulent flavour and firm texture. They are hermaphrodites. After two years as males they change gender and become females. The female can grow to 23cm (9 inches) long. Spot prawns are recognized by their reddish brown colour (which turns pink when cooked) and defining white spots on their tail and striped legs. Spot prawns are easily cooked within a few minutes.

KING SALMON

King Salmon (also known as Chinook Salmon) is the largest of all wild Pacific salmon. It has the thickest fat layer and the highest omega-3 fatty acids content of all salmon species. The flavor is rich, moist, and juicy and the texture is firm. King salmon can reach over 45 kg (100 lbs). The average size is from 4.5kg to 6.8kg (10lbs to 15lbs)..
